Our pizza program is a cornerstone of what we do: 80 seconds in a 900 oven, charred crust, and toppings chosen for their quality and flavor. We are looking for a Head Pizza Chef who will own that program completely. THE ROLE Enjoy the opportunity to innovate in a vibrant setting where your leadership makes a real difference. As the Head Pizza Chef, you will own mb r's pizza program end-to-end dough, sourcing, station, training, and evolution. This is not a line position that happens to make pizza. It is a lead role with real ownership over one of the most visible parts of our menu. You will work directly with the Head Chef and report to kitchen leadership. You will oversee all aspects of pizza preparation, kitchen management, and team supervision to deliver exceptional dining experiences. Your expertise will help elevate our culinary offerings and ensure the highest standards of food quality, safety, and presentation. WHAT YOU WILL DO • Own the pizza program: dough production, fermentation schedule, and daily quality control • Lead the development and execution of diverse pizza menus that cater to various dietary preferences and culinary trends • Manage the wood-fired oven: temperature maintenance, fuel management, floor rotation, and fire safety protocols • Supervise daily kitchen operations, including food preparation, cooking, and presentation to maintain consistency and excellence • Manage inventory control for ingredients, toppings, and kitchen supplies to optimize costs and reduce waste • Train, mentor, and supervise kitchen staff to foster a motivated team focused on quality and efficiency • Monitor shift management, ensuring smooth workflow during busy hours while maintaining high standards of service • Train and develop supporting kitchen staff on pizza station technique and standards • Collaborate with the Kitchen Chef on seasonal menu evolution and pizza specials • Maintain food cost targets for the pizza program • Uphold cleanliness, health code compliance, and allergen protocol at the station WHAT WE ARE LOOKING FOR • 3+ years professional kitchen experience, with at least 1 year on a wood-fired or live-fire pizza station • Experience with Neapolitan, Roman, or other regional Italian pizza traditions • Deep, hands-on knowledge of naturally leavened or slow-fermented dough • Comfort with high-volume service and the ability to maintain quality under pressure • Ability to work flexible shifts including evenings, weekends, and special event days • Proven experience in food production within a restaurant or hospitality setting, especially with pizza or similar cuisine • Strong leadership skills with previous supervising or team management experience in a fast-paced environment • Knowledge of food safety regulations, inventory management, and kitchen operations: Valid WA State Food Handler permit (or ability to obtain before start) • Demonstrated ability in menu planning, food handling, catering services, and restaurant management • Excellent communication skills to lead a diverse team effectively and coordinate with other departments NICE TO HAVE • Opening experience or lead station ownership at a previous concept • ServSafe Manager certification • Experience in banquet service, dietary considerations, or hospitality environments is highly desirable COMPENSATION & BENEFITS • $26 $32 per hour, commensurate with experience • Shift meal included every shift • Paid sick leave per Washington State law; PTO accrual after 90-day probationary period HOW TO APPLY Send a resume and a brief note tell us about a pizza you have made that you are proud of, and why.
